The purpose of specialty coffee is to discover and experience the unique characteristics of each coffee.

Roast Defects

Roast defects are any sensory characteristics that prevent a coffee's unique character from being fully expressed.

Under-roasting leaves characteristics associated with insufficient roasting unresolved, limiting the coffee's ability to express its full flavour potential.

Over-roasting introduces or amplifies roast-derived flavours that increasingly obscure the coffee's unique character.
